We are a family-owned artisan honey producer creating an exceptional range of premium, distinctive raw Australian honey that brings joy to honey lovers everywhere.

Our family's beekeeping heritage dates back to 1960.

Dolfi, our founder and Master Beekeeper, discovered his passion for bees and beekeeping as a child, learning from his father who kept hives and bred Queen Bees on the family farm.

Dolfi's childhood was immersed in the world of bees—his favourite playthings were his father's hive tools. One of his most vivid early memories is from age four, playing barefoot in the backyard on a sun-drenched spring afternoon. When he spotted his father suiting up in protective gear and heading to the hives, young Dolfi followed with wonder. Within moments, he was completely covered in bees from head to toe—much to his father's amazement.

Today, Dolfi's profound knowledge, mastery, and lifelong devotion to beekeeping allow us to create exceptional, innovative honey products that our customers cherish, trust, and come back for time and again.

From Hive to Jar: A Journey of Care

Our process begins at the hive, where we work in harmony with our bees' natural rhythms. We only harvest honey when the bees have capped the cells—nature's signal that the honey has reached perfect maturity with ideal moisture content.

The frames are carefully transported to our processing facility where they're uncapped by hand and placed in our cold-extraction centrifuge. Gravity and gentle spinning coax the honey from the comb without trauma or heat. The honey then rests, allowing air bubbles to rise naturally before it's lovingly jarred—still raw, unpasteurized, and brimming with nature's benefits.

Our Unique Cold-Extraction Process

At Metuka Honey, we believe the best honey is made by honouring nature's design. Our signature cold-extraction method sets us apart from conventional honey producers who use heat and aggressive processing techniques.

Unlike mass-produced honey that's often heated to high temperatures for faster filtering, we extract our honey at natural ambient temperatures. This patient, gentle approach preserves the living enzymes, beneficial probiotics, antioxidants, and delicate aromatic compounds that heat would destroy. The result is honey that tastes exactly as the bees intended—pure, complex, and alive with natural goodness.

Each batch is minimally filtered to remove only wax particles while retaining the fine pollen grains that give our honey its distinctive character and additional nutritional value.
